Cash Handling for Multi-Outlet Restaurant & Cafe Groups in Dubai
Running one restaurant is one cash job. Running five or ten under one brand is a different job. The question stops being count this till and becomes get the same, comparable number from every outlet, every night, without each manager inventing their own way of doing it. Add tourists paying in foreign cash, and every outlet also has to value and check notes it does not see every day.
Dubai is a global dining city, and the same brands run outlets across Abu Dhabi and the wider Gulf. When international visitors arrive in large numbers, so does foreign cash - dollars, euros, and more - across the counter. Here is a real example from one of our clients.
How Nusret standardized foreign-cash handling across its outlets
Nusret is one of the best-known restaurants in Dubai - the Salt Bae brand - and it draws customers from all over the world. When it opened, most payment was by card. But with so many international guests, a lot of them still paid in cash, and in many different currencies.
That became a problem at the till. Staff had to check whether foreign notes were real, and they got caught out by fake USD 100 bills. We fitted the outlets with Cassida Xpecto machines so the team could count, value, and check a mixed stack of currencies quickly.

The multi-outlet problem
When every branch counts differently - different machines, different steps - head office ends up comparing numbers that are not really comparable. A shortage at one outlet might be a real problem; the same shortage at another might just be a sloppy count. You cannot tell the difference without one standard.
One method, every outlet. Standardize the machine and the counting steps together, so a variance at one branch means the same thing as a variance at another.
Tier the kit by outlet size. A flagship and a small cafe do not need the same machine; match the model to each outlet’s volume.
Foreign cash is normal. Tourist-heavy outlets take many currencies; value and check them at the till instead of guessing.
A billing note for restaurant groups
One Dubai detail makes cross-outlet numbers trickier, and it has nothing to do with the machine: not every outlet bills the same way. A standalone restaurant or cafe generally cannot add a discretionary service charge - that was restricted years ago and is enforced. Outlets inside a hotel, or in some designated zones, can apply a service charge (usually up to 10%) plus a municipality fee (currently 7% of the bill). For a group with both kinds of outlet, that changes what each till should reconcile to, so build it into the counting standard.

Practical points
Count each outlet before you consolidate. Every branch counts and records its own till first; combine tills before counting and you lose track of which outlet a shortage came from.
Check foreign notes as carefully as AED. Fake USD 100 and EUR notes turn up in tourist-heavy outlets; a machine check catches what the eye misses.
